You have most likely already heard of Cream of Tartar, or at least have a small jar hiding somewhere in the depths of your spice cabinet.
This common ingredient can be found in a plethora of baked goods, sauces, puddings, whipped cream, and is commonly combined with baking soda and cornstarch to make baking powder. Though most well known for its leavening capabilities, did you also know it can help you quit smoking?
As a leavener, it has been long-loved for its known stabilizing effect in cooking and baking and has had a place on the spice shelf in restaurants and kitchens for hundreds of years.
As a matter of fact, Cream of Tartar is a tale as old as wine!
How old is wine you might ask? As it turns out, we can date it back to, at least roughly, 7,000 years!
The earliest evidence we have of intentional fermentation of grapes into wine was found in what Archaeology describes as a “neolithic village” mud hut.
The residue was gathered from a potsherd found there. After being analyzed, it was found that tartaric acid comprised most of the residue.
This acid is a raw component of Cream of Tartar, chemically known as Potassium hydrogen tartrate (or potassium bitartrate).
The acid is formed in crystal pockets during the fermentation process of winemaking, and is often referred to as “wine diamonds”.
Once fully formed, the crystals are released from sidewalls and corks of wine-casks using a torch.
Once completely dried, the wine salts are ground into a fine powder, becoming what is confusingly called cream of tartar.
As a finished product, the substance is 20% potassium, an element found largely in grapes.
Potassium is unique in that it is both a mineral and an electrolyte, and plays a strong role in regulating your body’s hormone levels and adrenal glands.
When you smoke cigarettes, it decreases your body’s ability to absorb potassium that you get from certain foods.
Low potassium is associated with just about every single health issue caused by smoking.
