Interested in a creamy but firm yolk? This recipe takes the “boiled” out of hard-boiled eggs.
Place your eggs in a saucepan and fill the water up to at least an inch above them. This ensures a full and even cook.
Put the saucepan on high heat and bring the water to a slight simmer. As soon as little bubbles begin to emerge to the surface, shut off the heat.
For this recipe, you don’t want to bring the water to a full boil.
Immediately place a lid on the saucepan and set a timer for 17 minutes.
Do not take a peek or open the lid. You want the steam to stay inside!
Once the time is up, pour out the hot water and fill the saucepan with cold water. Be careful not to let the eggs slide out!
You want to cool the pan down, so pour this water out and fill it up with cold water again.
With the eggs submerged in the cold water, let them sit for about 20 minutes, or until they have completely cooled down.
Take the eggs out, peel them under running water, and you’re good to go!

While the previous method suggests cutting off the heat before a full boil, this one recommends allowing the water to reach a hearty boil before covering the pan and removing it from the burner.
Be sure to keep the lid covered until your eggs reach the desired time.
Here’s the breakdown:
4-6 minutes for soft-boiled
7-8 minutes for medium-boiled
11 minutes for hard-boiled
