Ice Your Burgers
Place an ice cube in the middle of your burger patty while it cooks. You can also add a little bit of butter. This will keep your meat juicy and moist.
Heat Only Half of Your Grill
To avoid overcooking your meat, put coals on one side of your grill and heat the one side while keeping the other side cool. Placed your cooked pieces of meat on the cooler side when they are finished so that it stays warm, but doesn’t burn.
Brine Your Fish
Soak your fish in a salt water brine for 10 minutes before you throw it on the grill. This will prevent your fish from falling apart on the grill.
Apple Juice
Pour some apple juice into a spray bottle and spray your meat while it cooks. This will improve taste and tenderness. Some people use apple juice in place of BBQ sauce.
Pre-grill
Instead of running around like a chicken with your head cut off when guests arrive, try pre-grilling your food. You’ll be able to concentrate on your guests, you won’t feel pressured to make sure you serve everyone right away. You also won’t undercook your food.
You can cook your burgers up to four hours before your guests arrive. Cook it until it’s almost done then toss them back on the grill to heat them up when your guests arrive.
